How to Make a Gluten-Free Pasta Dish with Chicken and Courgette

Equipment:

  • Large frying pan
  • Wooden spoon
  • Pot for boiling pasta
  • Colander (for draining pasta)
  • Knife and chopping board
  • Measuring spoons

Ingredients:

  • 1 portion of gluten-free pasta (e.g., corn-based pasta)
  • 1-2 chicken breasts, chopped
  • 1 courgette (zucchini), chopped
  • 1-2 tbsp olive oil (or any preferred oil)
  • 6-4-6 Basic Tomato Sauce
  • Optional: Vegan coconut-based cheese, for topping (if tolerated)

Instructions:

  1. In a separate pan, heat the oil over medium heat. Add the chopped chicken and fry until golden and cooked through, about 5-7 minutes.
  2. Add the chopped courgette to the pan and cook for an additional 5 minutes, until softened.
  3. While it softens, cook the gluten-free pasta according to the package instructions. Drain and set aside.
  4. Pour in the prepared 6-4-6 Basic Tomato Sauce and stir to combine. Simmer for a few minutes to heat the sauce through.
  5. Serve the sauce and chicken mixture over the cooked gluten-free pasta. If desired, top with some vegan coconut-based cheese.
